Ingredients

  • 3 1/4 cups all-purpose flour
  • 3/4 cup brown sugar
  • 3/4 cup molasses
  • 1 large egg
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup (1 stick) unsalted butter, softened

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  3. Add the egg and molasses, then beat until well combined.
  4. In a separate bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until a soft dough forms.
  6. Divide dough into portions and roll into balls. Flatten slightly and place on the prepared baking sheet.
  7. Bake for 8-10 minutes, or until edges are set but centers are soft.
  8. Let cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
