Ingredients

  • 1 lb ground turkey
  • 1 medium head cauliflower, grated or pulsed into rice
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and cook until translucent, about 3-4 minutes.
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Add ground turkey, breaking it up with a spoon, and cook until browned.
  5. Sprinkle in chili powder, cumin, smoked paprika, salt, and pepper. Mix well.
  6. Stir in diced red bell pepper and cook for 2-3 minutes.
  7. Add cauliflower rice, mix, and cook for 5-7 minutes until tender.
  8. Remove from heat and garnish with fresh cilantro before serving.
