Ingredients

For the Chicken

  • 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 cup cornstarch
  • 2 large eggs
  • 1/4 cup vegetable oil

For the Sauce

  • 1/2 cup granulated sugar
  • 1/4 cup ketchup
  • 1/2 cup apple cider vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder

Instructions

  1. Preheat oven to 325°F. Lightly grease a 9x13-inch baking dish.
  2. Place cornstarch in a large zip-top bag. Add chicken and shake to coat.
  3. In a shallow bowl, beat the eggs. Dip each cornstarch-coated chicken piece into the egg.
  4. Heat oil in a large skillet over medium-high heat. Sear chicken pieces until golden but not cooked through.
  5. Place seared chicken in the prepared baking dish.
  6. In a medium bowl, whisk together all sauce ingredients.
  7. Pour sauce evenly over the chicken.
  8. Bake uncovered for 1 hour, turning the chicken every 15 minutes to coat well with the sauce.
