Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1/4 cup granulated sugar, for rolling

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, ginger, cinnamon, cloves, and salt in a medium bowl.
  3. In a large bowl, cream together butter and brown sugar until fluffy. Add the egg and molasses, mixing until combined.
  4. Gradually mix the dry ingredients into the wet mixture until well combined.
  5. Shape the dough into 1-inch balls, then roll in granulated sugar to coat.
  6. Place cookies about 2 inches apart on the prepared baking sheets.
  7. Bake for 10-12 minutes or until lightly browned around the edges. Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
