Preheat your oven to 350°F (175°C).
In a skillet over medium heat, cook ground beef and diced onion until browned. Drain excess grease.
Add taco seasoning and water to the meat mixture. Stir to combine and simmer for 2-3 minutes.
On a baking sheet, spread out tortilla chips evenly. Layer with the seasoned beef, shredded cheese, olives, and jalapeños.
Bake for 10-15 minutes or until cheese is fully melted and bubbly.
Remove from oven and top with tomatoes, green onions, cilantro, avocado, and desired toppings.
Serve immediately with sour cream and salsa on the side.
