Ingredients

For the Dough

  • 2 1/2 cups (320g) all-purpose flour
  • 2 teaspoons instant yeast
  • 1 tablespoon sugar
  • 3/4 teaspoon salt
  • 1 cup (240ml) warm water
  • 2 tablespoons olive oil

For the Filling

  • 1/2 cup (120g) pizza sauce or marinara
  • 3/4 cup (85g) shredded vegan cheese
  • 1/2 cup (70g) sliced black olives
  • 1/2 cup (60g) chopped bell peppers
  • 1/2 cup (60g) baby spinach, chopped
  • 1/2 teaspoon dried oregano or Italian seasoning

Optional Toppings

  • Extra pizza sauce, for dipping
  • Fresh basil leaves

Instructions

Prepare the Dough

  1. In a large bowl, mix flour, instant yeast, sugar, and salt.
  2. Add warm water and olive oil, then mix until a dough forms.
  3. Knead on a lightly floured surface for 5 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled.

Assemble the Pizza Rolls

  1. Preheat oven to 375°F (190°C). Line a baking tray with parchment paper.
  2. Punch down the dough and roll it out to a rectangle about 10x14 inches.
  3. Spread pizza sauce evenly over the dough, leaving a 1/2-inch border.
  4. Sprinkle with vegan cheese, olives, bell peppers, spinach, and seasoning.
  5. Roll up tightly from the longer side, then slice into 12 equal pieces.

Bake and Serve

  1. Arrange pizza rolls cut side up on the baking tray.
  2. Bake for 20-25 minutes or until golden and cooked through.
  3. Cool slightly, garnish with fresh basil if desired, and serve with extra pizza sauce for dipping.
