Ingredients

  • 12 oz white chocolate, chopped
  • 1 cup pumpkin puree
  • 1/4 cup powdered sugar
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Line a muffin tin with paper liners.
  2. Melt half of the white chocolate until smooth, then spoon a layer into each liner. Spread to coat the bottom and sides. Chill until firm.
  3. In a bowl, mix pumpkin puree, powdered sugar, pumpkin pie spice, cinnamon, vanilla, and salt until well combined.
  4. Spoon the pumpkin mixture evenly into the chocolate-lined cups.
  5. Melt the remaining white chocolate and pour over the pumpkin layer, smoothing the tops.
  6. Refrigerate until set, then peel off the liners before serving.
